There are countless recipes for cheese sauces which are versatile and delicious. Cheese sauce adds a special element to an ordinary dish and often makes vegetables more appealing to the young and old alike.

Cheese sauces are easy to make and add flavor, color and help to make meals more nutritionally balanced.

The following parmesan cheese sauce recipe is perfect for use in potato or bean casserole dishes, or over eggs, noodle dishes or steamed broccoli and asparagus.

This parmesan cheese sauce can be made in advanced, refrigerated and gently reheated when needed.

  • 1 1/2 T unsalted butter
  • 1 1/2 T Flour
  • 1 1/2 cups Milk
  • 1 T Dijon mustard
  • 1/4 tsp Hot Sauce
  • 1 tbsp fresh lemon juice
  • 1/3 cup grated parmesan cheese
  • Salt and pepper to taste

In a medium saucepan, melt butter over medium heat.

When the froth subsides, whisk in the flour, cooking for about 3 minutes. Whisk constantly and do not allow the flour to brown. It should begin to smell toasty when it is ready.

Whisk in milk and bring just to a boil. Immediately reduce heat and simmer gently for about 5 minutes.

Stir in mustard, hot sauce, lemon juice, cheese, and salt and pepper (be cautious with addition of salt as parmesan cheese tends to be salty).

Taste and adjust the seasoning if needed.
