Pancakes are a great way to start the day and there is probably not a child walking around that does not light up when they know that mom is digging through her recipes trying to find a different form of this great breakfast. Everyone loves blueberries and the fact that they are one of healthiest fruits around lets mom put them on the table with piece of mind.
Combine, salt, sugar, baking powder and flour and gently mix together. In a separate bowl, beat the eggs until they are completely blended and then whisk them into the first bowl. In separate bowl, combine the milk and butter until completely blended together and then fold into main mixture until all ingredients are combined. If batter is too thick, some extra milk can be added to thin it out a little more.
Spray skillet with cooking spray and then preheat on open medium flame. When skillet is hot, pour about 1/4c of batter for each pancake onto skillet. Sprinkle about 8 blueberries on each pancake immediately after pouring batter. Wait for pancakes to get slightly dry around edges and for the bubbles to start bursting before turning. Cook on second side and then remove from heat.
Recipes like this are best served immediately after coming off of the skillet. For added flavor, some butter can be placed on the pancake while it is hot off the grill. Regular maple syrup will be perfect for these pancakes to sweeten them up a little more, but will still allow the flavor of the blueberries to get through.
